This 7-inch santoku combines the best elements of a chef knife and a cleaver--producing straight, precise cuts of raw fish, poultry, or meat and uniform mincing of vegetables. Great for speedy prep work, the blade is hollow ground with "dimples," that create air pockets to prevent foods from sticking during slicing.

Brunello blades are forged from high-quality German carbon steel that resists rust and food stains. The stainless steel is ice-hardened for additional strength and longer edge retention. Blades are then polished with glass to produce a sharper cut but an edge that is smoother to the touch. Full tangs and a counter balance cap provide superior balance, while a rounded blade spine adds more comfort during extended periods of prepping. Beautiful handcrafted wood handles show off a rich grain in variegated shades of light and dark. In addition, their ergonomic shape offers a safe and comfortable grip.

This 10-piece set puts together a pretty well-rounded assortment of knives including: an 8-inch chef knife, a 6-inch boning knife, a 3-1/2-inch parer, a 9-inch bread knife, a 5-inch serrated utility knife, a 6-inch utility knife, and an 8-inch slicer. A 10-inch sharpener is included for daily honing and polishing the knife blades. The set also offers a pair of forged kitchen shears for cutting poultry or string. All pieces fit into a handsome bamboo block with labeled slots for each knife in the set and a few extra unlabeled slots for additions. Though the serrated blades (bread and utility knives) and the hollow-ground or "dimpled’ blade in this set (slicer) produce nice clean cuts, the other cutlery is slightly dull right out of the box. Immediate sharpening on a fine steel is recommended before using these knives to bring their edges to a sharper and safer angle for exact and injury-free cutting.
